I had the honour of representing Kudos Blends as a speaker at the Australian Society of Baking conference last month. It’s hard to believe, but the last time I spoke there was all the way back in 2013!

This time, I had the chance to showcase our innovative leavening agents, in particular ZEUS™ C120. It offers a great way to reduce cocoa in chocolate bakery products delivering some fantastic and much-needed cost savings to the bakery industry. It was a perfect match for Monica Kate’s talk from IRCA on the future of chocolate and cocoa. I was amazed to learn that it takes 4 years and 7 months to go from planting a cocoa seed to making a chocolate bar! It really hit home that the cocoa crisis is far from over, which is why I’m confident ZEUS™ C120 will have a big impact on the global bakery industry.

I also had the opportunity to talk about ZEUS™ G90, which can be used very effectively to extend the shelf life of baked goods. This makes the preservatives considerably more effective and will help to overcome distribution challenges.

The presentations throughout the event were interesting and full of energy; and one thing that stood out to me was seeing three women present at such a prestigious conference -what a great moment for Monica Kate of IRCA, Dea Korcari of Lallemand and of course myself. The whole experience was both enjoyable and productive. The venue, the Melbourne Cricket Ground, was the perfect setting for such an inspiring event.
